Over medium high heat (not medium, not high, but medium high) melt small amount of fat (butter or margarine) until hot and bubbly. Pour about 1/2 cup of batter into pan. I use a soup ladle. That's just the right amount and easy to pour.
When pancake starts to solidify and to look somewhat solid on top, gently slide a turner or spatula underneath and flip over. At this point, pancake will get done very quickly.
When finished, slide directly from pan onto plate. Serve with berries, applesauce, jam, or -- in your case -- maple syrup.
