Scrambled Eggs

Gordon Ramsey Way



Crack eggs directly into the pan
Add butter, *do not add salt as it will break down the eggs*
Rubber spatula, and whisk away

On med to high heat - stir, put the pan off, stir, take the pan off

When the eggs start to curdle, add cream or milk

When ready, THEN add salt, garlic salt, and pepper, 1/4 tsp. baking powder

Finish with the pan on the flame to make sure the eggs are hot for being served. Check to make sure there is proper consistency.

Traditional Way



Theory is that the salt breaks down the eggs, so it's best to wait until they are in the pan.

Pre-heat pan at low heat
Add coating of butter
Throw on tortillas until cheese is barely melting
when ready, pull tortilla off pan, add contents

German Pancakes



Ingredients

6-8 Eggs
1 cup Flower
1 cup Milk
1 & 1/4 cup Water
1/4 teasp. Salt

Put all ingredients in a bowl and mix with wooden spoon until smooth.

Insructions


Over medium high heat (not medium, not high, but medium high) melt small amount of fat (butter or margarine) until hot and bubbly.
Pour about 1/2 cup of batter into pan. I use a soup ladle. That's just the right amount and easy to pour.

When pancake starts to solidify and to look somewhat solid on top, gently slide a turner or spatula underneath and flip over. At this point, pancake will get done very quickly.

When finished, slide directly from pan onto plate.
Serve with berries, applesauce, jam, or -- in your case -- maple syrup.

Tuscan Minnestrone



Ingredients

2 Tablespoons olive oil
1 cup carrots
1 cup onions
½ cup celery
2 garlic cloves
½ teaspoon dried thyme leaves

1 19-oz. can Progresso Cannellini Beans, drained & rinsed
1 15-oz can Progresso Black beans, drained & rinsed
1 14.5-oz. can vegetable broth

Instructions

Heat olive oil in a big pot on high heat

Add carrots, onions, celery and garlic.
Cook 4-5 minutes until onions are tender, stirring occasionally.
Stir in all remaining ingredients.
Bring to a boil.

Reduce heat to medium.
Simmer 10-12 minutes.
Salt to taste.

Chicken can be added, best cut into cubes at the halfway point.

2 eggs separated - egg whites in a mixing bowl, yellow centers in a separate bowl

In a mixing bowl

2 cups flour, sifted
1 tbsp. baking powder, sifted
1/4 tsp. baking soda, sifted
1 tsp. salt
1 tbsp. powdered sugar

3/4 tsp. lemon zest or 2 tsp. lemon juice
2 tbsp. melted butter
2 cups milk
2 egg yolks
1 tsp. vanilla coffee sweetener

stir...

Whisk egg whites, fold into batter.

Let sit for 10-15 minutes, then throw on the pan.


Consider:
Using the pancake like a tortilla.
Peanut Butter
Oatmeal
Indian Flour
Ricotta Cheese
Seltzer Water

  • 1 1/2 cups all-purpose flour (measure exactly)
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon honey
  • 1 1/4 cups milk (measure exactly)
  • 1 1/2 egg (1 full egg, 1 egg white)
  • 2-3 tablespoons butter, melted
Consider (reluctantly):
Blueberries or fruit
Fruit
Vanilla
more honey
3 tbsp. instead of 2 tbsp. butter

    Pasta shells



    Ingredients

    Pasta Shells
    Marinara Sauce
    Mushrooms
    Parmesan

    Instructions

    Preheat oven to 350/375
    Use a square glass container
    Line the bottom with foil
    Cover half the container with marinara
    Drop the shells, making sure the cheesey openings are facing up
    Fill with the rest of the marinara
    Add Parmesan
    Cover with tin foil and then bake for about half an hour, checking the center to make sure that the shells are adequately warm.

    Additional

    Baguette
    Tomatoes, Mozzarella, and Balsamic Vinaigrette
    Red Wine

    Fish Tacos


    Tuna Steak

    Is well...a tuna steak. Lightly salted on both sides. Squeeze orange and lime for seasoning. Add oil, heat the skillet to low-medium. Add pepper late in the game.

    Fish Taco Sauce

    1/3 cup plain yogurt
    1/3 cup mayo
    1 tbsp lime
    1/2 tbsp chipotle
