Mushroom Risotto







2 1/2 tbsp. garlic
Red Onions
Shallots?
1/2 cup white wine
(1) porcini mushroom

1 1/2 cup white mushrooms
1/2 cup shitake

1 cup of parmesan (2) different types

add Aborio rice, when dry add vegetable stock (4) cups total

Veggie Melt

From here.


Dijon mustard

Balsamic Vinegar


Slices of *good* mozzarella

Portobello mushrooms (seared)

English Muffins

AVOCADO slices

Pear (sliced)

Red onion chopped into slices

Green onion chopped coarsely

Tomato sliced thinly


Consider

Apple


Toast buns, add ingredients, and then in the oven 350 dg. until the mozzarella has slightly melted.



Tofu w/ Peanut Sauce



Tofu covered in flour, left for 5 mins

Med to high heat skillet
Olive oil
Soy
Siracha
until Tofu is brown

Generous Peanut Sauce for 1 min

Drizzle honey and stir

Served on white rice. Takes virtually no time whastoever to fix.

It's delicious, healthy, and vegan! Wtf?

Consider: grilled pineapple

Roasted Beets w/ Ricotta and Arugula Salad



4-5 Beets
(2) Lemons
Olive oil
Salt - 1 tsp.
Pepper

Cover in foil 350 dg. for 45 minutes
take out, stir
30 mins unwrapped

Chives

Serve on Ricotta Cheese

Arugula Lettuce
Basil vinaigrette

Veggie Burger



Houston's Recipe (from here)

Serves: 4


1 tablespoon honey
1 tablespoon molasses
If marinating, 1tbsp. honey, soy, hoison, molasses

Throw onions and beets on the skillet until dry

Chill to maintain form of the burgers

High heat until slightly black on both sides (roughly 1.5 minutes)
Bake at 375 dg. for 7 minutes

Consider: 4 cloves of garlic, chopped
Jalepeno pepper
1 tsp. soy
White onion instead of red

Notes: Houston's lied to you, Chef #226412---They do use chopped beets. I used to make the veggie burgers when I worked prep there. Brown rice, oat cereal, chopped black beans, salt, pepper, fresh garlic, jalapenos, white onion. The glaze is honey, soy, hoisin, and molasses. it gets dipped before grilling and held in the marinade before cooking.

  • 1 teaspoon Thai chili sauce or hot sauce

Salmon with Dijon Mustard and Brown Sugar



Serves: 2

1 lb. Salmon

Cut in the fashion described 2:21 in:


In a bowl and stir:

1/4 cup brown sugar
1/4 cup honey
4 tbsp. Dijon
2 tbsp. Lemon Juice (or the juice from 1 lemon)
3 tsp. flour
1/2 tsp. balsamic
1 cooking tsp. butter
1 1/2 tsp. Siracha

Salt and Pepper in the middle of the salmon steaks, salt and olive oil on the bottom pepper well on top.
6 cloves of garlic put around the salmon

Oven for 23 mins (exactly!) at 375 dg.

Sides:
Mushrooms with olive oil
Arugula
Spinach

Consider: green onion and a slice of lemon halved on top

The Perfect Burger (the Zerger)



Serves: 8

Ingredients

2 lbs. Brisket (ask the grocer to grind the brisket at the store or use a food processor)

Red Onions sautéed so that they carmelize
Mushrooms also sautéed

Embedded in the beef...

3/4 cup red onion, chopped
1 egg
1 cup $1 Ruffles sour cream & onion (literally hammered in a plastic bag, turned into bits)
4 slices or 1/3 cup bacon bits
2 tsp. garlic salt
1/4 cup siracha
6 large cloves of garlic
3/4 cup small cubes (2) different kinds of cheddar (yellow, white)

2 mins each side on the stove, high heat (1-7, 5.5)
6 mins baking, 375 dg (after 3 mins flip over).

Arugula lettuce
Tomato
Avacado
Mayonaise
Mustard
