Scrambled Eggs

Gordon Ramsey Way



Crack eggs directly into the pan
Add butter, *do not add salt as it will break down the eggs*
Rubber spatula, and whisk away

On med to high heat - stir, put the pan off, stir, take the pan off

When the eggs start to curdle, add cream or milk

When ready, THEN add salt, garlic salt, and pepper, 1/4 tsp. baking powder

Finish with the pan on the flame to make sure the eggs are hot for being served. Check to make sure there is proper consistency.

Traditional Way



Theory is that the salt breaks down the eggs, so it's best to wait until they are in the pan.
