Roasted Beets w/ Ricotta and Arugula Salad



4-5 Beets
(2) Lemons
Olive oil
Salt - 1 tsp.
Pepper

Cover in foil 350 dg. for 45 minutes
take out, stir
30 mins unwrapped

Chives

Serve on Ricotta Cheese

Arugula Lettuce
Basil vinaigrette
